Don Manolo
Chef Don Manolo Caamaño, a native of La Coruña, Spain, has known cooking since childhood. It is certainly his expertise, dedication and vision the perfect recipe for the continued success of Restaurante La Casona in San Juan, Puerto Rico.
Manolo, as he's called by all who know him, came to Puerto Rico from New York in l969. He began working for a year at the El Cid restaurant, now closed. He helped open Torre de La Reina restaurant as Executive Chef, but after six months in this place, he had the opportunity to acquire La Casona.
It was 1971 and since then Don Manolo delivers all his experience to create the elegant blend of La Casona, every day. Caamaño personally oversees the ongoing architectural improvements that the restaurant has undertaken, like a new dining room, bringing the total sum of Salons now available for activities to seven, as well as expanding the garden area and parking facilities for 250 vehicles.

La Casona Restaurant has always been known for its exquisite and varied menu, elegant decor, welcoming atmosphere and good service. More than enough reasons for having standards in the culinary art, in and out of Puerto Rico
In August 1992, Manolo actually made another of his dreams come true, by inaugurating an underground wine cellar, where time is imperceptible.
"La Bodega de Manolo" as reads the sign at the entrance gate from the garden, is unique in Puerto Rico. It really has a unique and original style.
Designed by Don Manolo himself is interesting the fact that it was built by him and maintenance employees of La Casona.
Entering the cellar it's like starting an imaginary journey to another land, another time. It is a impressive, friendly place where visitors feel comfortable and at peace.
Everything is rustic and original. Nothing is imitation or artificial. There is not a single detail out of place. Built and decorated with taste and distinction.
The winery has a cooling system designed exclusively for La Casona, which keeps it balanced between cold and humidity to preserve wines, achieving a nice and friendly atmosphere for visitors.

Antonio Carmona is a long time resident at La Casona restaurant. He's a talented guitarist from Andalucia, Spain, and for over 30 years had accompanied our visitors with his unique classical and flamenco chords.
His musical notes add a new dimension to the living experience of the guests, creating a more relaxed and friendly atmosphere.
